Imagine an ancient village founded by the Templars between the Val D’Orcia and the Val di Chiana that has been a convent of the Olivetan monks, a hospice for pilgrims, and a farm. There are an art historian, Sabina de Gregori, and a chef, Sara Scaramella who have created Fondo, a restaurant in the heart of Abbadia Sicille.
There are local producers and farmers, there is the vegetable garden, the orchard, and the bread rising, there are soups, dough, and burning embers. There is the table that is a living space in which food performs its function with honesty and with a single claim: to be simply good.
